1. In the top part of a double boiler, melt butter. 2. Add cheese and ale and stir occasionally until cheese is melted. 3. Stir in Worcestershire sauce, lemon juice and eggs. 4. Season with the dry mustard, cayenne and salt. 5. Simmer, stirring frequently until mixture thickens. 6. Reduce heat and hold, stirring occasionally, while you prepare poached eggs and toast. 7.
