Grain Free Blueberry Cheese Danish


1. Preheat oven to 350 degrees.

2. Microwave the mozzarella in safe bowl for 1 minute. Stir and then microwave 30 more seconds. Stir and microwave another 30 seconds. It should look like fondue at this point.

3. Add the 2 oz cream cheese, 1 egg and flour mix, mix in a food processor or in bowl with a wooden spoon. If not mixing well, dump on wax paper and knead with hands until uniform in color.

4. On parchment lined baking sheet, spread dough into a 9 x 12" shape.

5. In same food processor or bowl, mix the remaining ingredients except berries.

6. Put the filling down the center of the dough the long way. Use a rubber spatula to push back into middle as needed.

7. Sprinkle the blueberries on top of cheese.

8. Cut 1" strips down edges of the dough and criss cross up and across cheese and berries.

9. Bake for 40-45 minutes or until cheese is set and not jiggly.
