1. In medium bowl, combine tomatoes, mint, feta, olives, 1 teaspoon oil, half the salt and half the pepper. Let stand until ready to serve. 2. Sprinkle chicken with remaining salt and pepper. In large skillet, add remaining oil. 3. Add chicken and cook, turning once, for 5-6 minute per side or until no longer pink.
