Greek Lentil Stew


1. Spray a large saucepan with cooking spray; heat over medium heat until hot.

2. Sauté onion, bell pepper and garlic until tender, about 5 minutes.

3. Add potatoes, lentils, tomatoes, stock and seasonings; heat to boiling. Reduce heat and simmer, covered, until lentils are tender, about 25 minutes.

4. Add zucchini and green beans; simmer, uncovered, until vegetables are tender and stew is thickened, about 10 minutes. Season to taste with salt and pepper.
