Green And Red Tomato Rice


1. Add oil to a medium size sauce pan.

2. Add chopped vegetables and saute over medium heat until tender.

3. Add 2 1/2 cups water, salt and pepper, cover and bring to a boil.

4. Add rice, stir and cover.

5. Reduce heat and simmer 15 minutes.

6. Remove pan from heat and let sit until liquid is absorbed and rice is fluffy.
