1. Place a pot of water to boil with added salt. 2. Cook beans about three minutes until tender crisp. 3. Drain and place in cold water to stop cooking, drain . 4. Place cooked beans into a large bowl, add beets, chickpeas and mint. 5. In another bowl place oil and vinegar salt and pepper to taste. 6. Pour dressing over veggies and toss. 7.
