Guisado De Consuelo


1. Dice potatoes into approximately 1/2 inch cubes.

2. In a large frying pan, cook the potatoes in oil until lightly crisped and browned, about 10-15 minutes.

3. Remove from the pan and set aside.

4. In the same pan, saute onion and bell pepper until limp.

5. Add ground beef and cook until crumbled and brown.

6. Add potatoes back to pan, and add bouillon, salsa and water.

7. Reduce heat and let simmer uncovered for about 45 minutes until thickened, stirring occasionally.

8. Serve with warm flour tortillas.
