Healthier Mexican Casserole


1. Preheat oven to 450 degrees.

2. Brown grown turkey

3. Add taco seasoning and water and simmer uncovered for about ten minutes.

4. Puree black beans with green chilies and tomato paste.

5. Layer in a 9 by 13 inch casserole dish with enough enchilada sauce to cover bottom, then tortillas, 1/3 of bean mixture, 1/3 of taco meat, 1/3 of cheese, repeat and top with the rest of enchilada sauce

6. Bake for about 30 minutes.
