Healthier Slow Cooker Pernil


1. In a mortar and pestle or food processor, make a paste with garlic, oregano, cilantro, cumin, paprika, salt, pepper, lime juice and olive oil.

2. Using a pairing knife, make slits inside the pork loin.

3. Rub the garlic mixture all over the pork loin, making sure to get some of it into the holes you made with the knife.

4. Add a few tablespoons of water to the bottom of a slow cooker. Place the seasoned pork loin inside. Place on low, cover and cook for 4-5 hours, until the pork is tender.

5. Allow pork to rest for thirty minutes before slicing and serving.
