1. In a small bowl, combine oil, vinegar, herbs, garlic and pepper. 2. Rub filet with mixture, wrap in plastic and chill for 2 hours or overnight. 3. Preheat oven to 250*. 4. Arrange roast in roaster pan. 5. Sprinkle with salt. 6. Roast until internal temperature is 130*-145*. 7. Remove from oven, and allow to sit 15 minutes. 8.
