1. Soak the ginger root in cold water for a few minutes to make it easier to remove the outer skin. Carefully peel the skin off with a sharp knife and cut into quarters. 2. Combine all the ingredients in a food processor with a steel blade and blend until smooth. (Again, divide the ingredients in half and blend each half separately, if food processor is not big enough for entire recipe.). 3. Combine in a lidded jar that will hold entire recipe, our separate in smaller jars. 4. Refigerate. 5.
