Inlagd Sill - Scandinavian Pickled Herring


1. Soak herring overnight.

2. Drain; skin and remove all bones.

3. Mix vinegar, pepper, sugar, crushed peppercorns and pour over herring.

4. If the vinegar is very strong, dilute with water.

5. Let stand for a few hours.

6. When serving, cut into 1/2 inch wide strips diagonally across fish and arrange on a dish to look like a whole fillet.

7. Garnish with minced onion.
