Insalata Caprese (Or Caprese Salad) With Balsamic Reduction


1. Set out tomatoes and cheese (I like them to be room temperature, just personal preference).

2. Stir balsamic vinegar and sugar together in a small, heavy saucepan. (I'm sure you could substitute some other form of sweetener, but I've never tried it).

3. Bring to boiling over med-high heat; simmer for 10 minutes, stirring occasionally.

4. While reducing vinegar, cut up other ingredients and arrange nicely on a plate.

5. Drizzle with balsamic reduction.

6. Serve immediately and enjoy!
