Irish Fluffy Lemon Pudding


1. Cream the butter.

2. Add sugar and beat well.

3. Grate the rind of the lemons and squeeze out the juice, strain, set aside.

4. Separate the eggs, add one yolk at a time to the butter/sugar mixture beating well between Stir in the flour and gradually add the lemon juice and rind'.

5. Add the milk.

6. Whisk the egg whites stiff and fold gently into the batter.

7. Place into a pie plate and bake in a 350F oven for apprx 40 minutes.

8. Dredge with Icing sugar (optional).

9. Serve with whipped cream (optional).
