Irish Potato Scones

Irish Potato Scones


1. Boil potatoes until tender. Drain. Peel. Rice.

2. Mix with the bacon fat, salt and flour.

3. Roll out into a 1/4 inch thickness. Cut in 2 inch circles. Prick all over with a fork.

4. Heat an iron skillet over high heat.

5. Add scones, a few at a time. Turn heat to medium. Cook until browned and speckled.
