Italian Chicken And Vegetable Soup


1. In large dutch oven, heat oil over med heat.

2. Add chicken and cook for 10 minutes, stirring frequently.

3. Add onions and carrots and cook for 5 minute.

4. Stir in zucchini, tomatoes and chicken broth.

5. Bring to a boil, reduce heat and simmer uncovered for 30 minutes.

6. Top each bowl with cheese if desired.
