Italian Enchilada Casserole


1. Spray large casserole dish with non-stick spray.

2. In a blender combine tomato sauce, salsa, ortega chiles, and enchilada sauce and puree until smooth.

3. take a ladle of sauce mixture place on bottom of dish.

4. cut 4 corn tortillas in half and place them on top of sauce mixture.

5. chop red and green bell peppers, jalapeƱo pepper, onion.

6. saute and cook peppers, onions, and italian sausage together until cooked and brown.

7. place sausage, onion, and peppers on top of corn tortillas in casserole dish.

8. cut 4 more corn tortillas in half and place on top of sausage, peppers, and onions mixture.

9. add another ladle of sauce mixture on top of tortillas.

10. mix monterey jack and mozzarella cheese together and then distribute on top of sauce mixture.

11. bake at 350 for 40 minutes.
