1. Wash potatoes and cut into slices or cubes. 2. In large bowl, combine olive oil, garlic and oregano. 3. Add potatoes and bell peppers; toss to coat. 4. Arrange in a single layer on a 15-1/2" X 10-1/2" pan. 5. Salt and pepper to taste. 6.
