1. In a medium saucepan over medium heat, sauté shallot and garlic in olive oil or cooking spray for about 2 minutes. Add lentils, tomatoes, and herbs and bring to a boil. Reduce to simmer for about 5 minutes. Salt and pepper to taste. 2.
