1. Cook spinach; drain well. 2. In medium bowl, combine spinach, Parmesan, mushrooms, onions, oregano, salt and egg. 3. Spray miniature muffin tins with Pam. 4. Cut prosciutto into quarters. 5. Press 1/4 slice into muffin tin, pressing against bottom and sides. 6. Spoon cheese mixture into cup about 2/3 full. 7. Bake 20-25 minutes in preheated 375 degree oven. 8. Remove. 9.
