1. Remove the sausage from the casings. 2. In a large stockpot brown the sausage in a little olive oil over medium high making sure to break them into pieces, when cooked remove and set aside. 3. Add onion, garlic and green pepper, sauté until tender. 4. Add sausage, chicken broth, carrots, Pastene tomatoes, cheese tortellini, garlic, basil and oregano to stockpot. 5. Bring to a boil and then simmer uncovered for about 2 hours until tortellini are cooked. 6. Serve in soup bowls and sprinkle with parmesan cheese if desired along with italian bread to slop up the broth. ---------------------------------------------------------------------------
