1. Trim and string beans, cut into 5cm (2in) lengths. Wash mushrooms, and slice: quarter onions: remove stalk from pepper, cut into strips: peel carrots, cut diagonally into 2.5cm (1 in) chunks: divide cauliflower into florets: cut unpeeled eggplant into 2.5 2.
