1. Heat the olive oil in a kettle. Add onion, bell pepper, herbs and salt. Saute over medium heat until the onion is very soft (8 to 10 minutes). 2. Add tomatoes, tomato paste, honey and black pepper. Use a spoon to break up the tomatoes into bite size pieces. Bring to a boil, then lower heat and simmer, partially covered, for 20 - 30 minutes. 3. Add garlic and cook 10 minutes more. 4. Serve over pasta or anywhere tomato sauce is called for. ---------------------------------------------------------------------------
