Jamaican Jerk Shrimp Quesadillas


1. Place rack in lowest position in oven.

2. Preheat oven to 450°F.

3. Arrange 4 tortillas on large foil lined baking sheet.

4. Lightly coat the tortillas with non stick cooking spray; flip over.

5. Sprinkle half of cheese over tortillas.

6. Sprinkle with shrimp, green onion and cumin.

7. Top with remaining cheese, then tortillas.

8. Coat with non stick cooking spray.

9. Bake on bottom racke in 450°F oven about 10 minutes, flipping halfway through.

10. Cut into wedges.

11. Serve with sour cream and salsa.
