Japanese Sweet Potato And Rice - Shojin Ryori


1. Peel sweet potato and cut into bite size pieces.

2. Wash rice using several changes of water.

3. Place rice, sweet potato pieces, salt to taste and sake in the rice cooker. Put your hand flat on the top of the rice and pour in cold water until it reaches where your wrist starts.

4. Let it sit for about 20 minutes before cooking the rice. Once the cooking cycle is done, let it sit for about 15 to 20 minutes and fluff with a wooden or plastic rice paddle.
