1. In a large heavy saucepan, over medium-high heat, heat the olive oil and brown the sausage. Use a slotted spoon to remove the sausage from pan. 2. Pour off any excess oil, leaving about 1 to 2 teaspoons in the pan. Stir in the onions, peppers, and garlic. Cook, stirring occasionally, until the vegetables are soft, about 5 minutes. 3. Add red wine and cook until the wine is almost all evaporated. Add the remaining ingredients, including the cooked sausage.
