1. In a large METAL pot (not enamel or non-stick) over medium heat, melt butter. 2. Cook onions, stirring frequently for about 30 minutes or until golden and transparent. 3. Add flour and cook for one minute. 4. Gradually stir in broth (s). 5. Bring to a boil, reducing heat and simmering for 5 minutes. 6. Preheat oven broiler to high. 7. Pour soup into oven-proof bowls which have been placed on a baking sheet. 8. Place a slice of bread on top of each bowl and place as much cheese as desired over the top of the bread. 9.
