1. Remove heads from prawns and slice the shell along the back. Heat olive oil and saute the garlic, onions and tarragon for 2 minutes. Add the prawns and cook for about 3 minutes until they're cooked through. Lower the heat and add the white wine to the pan. Let it simmer for about 2 minutes before stirring in the sour cream.
