Kanji


1. Wash and scrape carrots.

2. Cut into 4 lengthwise.

3. Dry grind the mustard seeds.

4. Mix together carrots, salt, mustard seeds and chilli.

5. Gently add water, mix well.

6. Put the mixture into a large bottle.

7. Close lid tightly and keep it in the sun for 5-6 days.

8. Shake the bottle a few times daily.

9. Chill kanji before serving.

10. Sprinkle chopped mint and serve.
