Kay'S Green Sauce Enchiladas


1. Preheat oven to 350°F

2. Place a large nonstick skillet coated with cooking spray over medium heat until hot.

3. Add onion, and sauté for 6 minutes or until tender.

4. Add chicken, ½ cup cheddar cheese, picante sauce, cream cheese and cumin.

5. Cook for 3 minutes or until cheese melts.

6. Spoon about 1/3 cup chicken mixture down center of each tortilla, and roll up.

7. Place enchiladas in a 13x9x2 inch baking dish; drizzle with taco sauce, and sprinkle with ½ cup cheddar cheese.

8. Cover and bake at 350°F for 15 minutes or until cheese melts.

9. Serve enchiladas immediately.
