1. Cut the carrots into diagonal slices. 2. Cut the capsicum into 2" triangles. 3. Break the broccoli into florets. 4. Thinly slice the cabbage. 5. Slice the onions in quarters and break apart. 6. Stir fry vegetable in peanut oil until brown. 7. Add the chicken broth and reduce. 8. Stir fry until vegetables are tender. 9. Stir in chopped mint and serve. 10.
