1. Grate the potatoes and onion. Place between paper towels and squeeze to remove excess moisture. Transfer to fresh towels and repeat. 2. Place potatoes and onion into a bowl. Stir in eggs and matzah meal. Salt and pepper to taste. 3. In a large, shallow frying pan, add enough oil to make a 1/2" layer. Heat to medium. 4. Drop spoonfuls of batter into oil. Fry until golden brown (about 4 mins) then flip until golden on other side (3 mins). 5.
