1. Place leeks in a pan of cold salted water, bring to the boil and boil for 2-3 min or until tender. 2. Drain and reserve 300ml (1/2 pint) of the cooking liquid. 3. Melt the butter in a saucepan, add the flour and mix until smooth. 4. Blend in the reserved liquid and bring to boil, stirring continuously. 5. Add the soft cheese, season and return to the boil. 6. Arrange the leeks in a shallow flameproof dish, then pour the sauce over the top and sprinkle with Parmesan cheese. 7. Place under a preheated grill until golden and bubbling. 8. Garnish with a sprinkle of paprika. 9. Serve immediately. ---------------------------------------------------------------------------
