1. Special equipment: aebelskiver pan. 2. Mix first the flour, baking powder, baking soda and salt in large bowl. 3. Whip the egg yolks in another bowl, and then add in the granulated sugar. Add the butter and stir well. Slowly pour in the buttermilk while stirring. 4. Pour the wet mixture into the dry mixture and stir. 5. In another bowl, whip the egg whites to a fluffy consistency with soft peaks. Fold into the batter and mix together softly, being careful not to over stir. 6. Spray nonstick cooking spray into the wells of the aebleskiver pan. Drop in a small amount of butter for flavor. Spoon in the batter, filling the wells. Pop in 3 to 4 blueberries and let cook for a minute. 7. Lift and three-quarter-turn each one (we use metal chopsticks to turn the balls), allowing the batter to spill out and cook. Continue turning until a perfect globe is formed. 8. Sprinkle powdered sugar on top and spoon a dollop of lemon curd right on top.
