Lemon Lemon Garlic Chicken


1. Season the flour generously with salt and pepper. Coat each piece of chicken in flour.

2. Brown in hot oil in a large skillet, turning once. Pour off oil if desired.

3. Add the lemon juice and garlic to the skillet and mix lightly. Cover, reduce heat to low, and simmer 30 minutes. Add the parsley and simmer until cooked through, about 20 minutes longer. Remove the chicken from the cooking liquid to serve. (But use a spoonful of the liquid on rice or gravy, if desired.).
