Lemon Vanilla French Toast


1. Lightly beat eggs. Add egg beaters, soy milk, salt, and lemon zest.

2. Spray skillet and put over medium heat.

3. Soak bread and cook 2 at a time, until lightly browned.

4. Serve with maple syrup or fresh blueberries and vanilla yogurt.
