Lemony Greek Potatoes


1. Preheat oven to 350F.

2. Wash and peel potatoes. Slice into wedges no bigger than 1 inch and place into a large bowl.

3. Juice lemon and add to the potatoes. Add olive oil, melted butter, salt, oregano, garlic powder, pepper and paprika. Mix well.

4. Arrange potatoes in a single layer in a 9x13" pan. Scrape the seasoning from the bowl onto the potatoes as well.

5. Slowly add the vegetable broth, taking care not to pour directly over the potatoes to avoid rinsing off the seasonings. Dust with additional paprika.

6. Cover pan with aluminum foil and bake for 30-40 minutes.

7. Remove foil and bake for another 30-40 minutes, or until the potatoes are tender.

8. Remove from the oven, cover with aluminum foil, and allow to rest for about 15 minutes.

9. Serve!
