1. Fry the onion and garlic in a little oil then add the lentils, red wine, stock, vinegar and thyme. 2. Simmer gently for 30 minutes until tender, add the chorizo for the last 5 minutes of cooking time. Season with salt and pepper. 3. Stir through the parsley. 4.
