Lightened-Up Lemony Chinese Chicken


1. Preheat oven to 400 degrees.

2. Mix the panko, lemon zest, ground ginger, and sesame seeds in a 1-gallon plastic bag and mix well. Season with salt and pepper.

3. Add the chicken tenders a couple of pieces at a time and close & shake to coat.

4. Arrange coated pieces on a baking sheet and repeat until all of the chicken has been coated.

5. Bake 20-25 minutes. When done, garnish with chives.

6. SAUCE:.

7. In a small bowl, whisk together the honey, lemon juice, and soy sauce with just a little bit of water. Serve on the side as a dipping sauce.
