1. Put everything but the beef in a saucepan simmer 5 minutes or so and let cool. 2. Put cooled sauce and beef in a ZipLoc bag{she used a covered glass pan}in the fridge for 24 hours, turning occasionally. 3. Pat meat dry and brown/lightly sear in a little oil{use your roaster on the stovetop, save a wash}. 4. Pour sauce over, cover, and start in cold oven. 5. roast{covered} at 325F for 2 1/2-3 hours. 6.
