1. Heat oil in a nonstick skillet over medium-high heat. Add onions and sautee until translucent, about 4 minutes. 2. Add bell peppers, corn, chile, cumin and coriander and cook another 2-3 minutes, stirring to keep from sticking (you can add a little water if you need to). 3. Stir in rice, beans, salsa, and salt and pepper to taste; cook till heated through. 4. Put it in a bowl, top it with your preferred garnishes, and dig in! 5.
