Madhur Jaffrey'S Shrimp In The Maharashtrian Manner


1. Peel and devein shrimp if necessary.

2. Put them in a bowl.

3. Add crushed garlic, ginger, tamarind paste, turmeric, salt and chili powder (cayenne).

4. Mix well and set aside for 10 minutes (not longer , as raw ginger tends to affect the texture of the shrimp).

5. Heat the oil in a frying pan or wok over medium high heat.

6. When hot, put in the whole mashed cloves of garlic.

7. Stir until they brown lightly.

8. Now put in the shrimp.

9. Stir for 1 minute so that they also brown lightly.

10. Turn the heat to medium-low.

11. Put in the coconut milk, fresh coriander, and green chilies.

12. As soon as the sauce begins to simmer, turn off the heat and serve.
