1. Preheat oven to 325°F 2. In a bowl, cream together butter and sugar. Add egg yolks, vanilla, and lemon zest, and mix well. Gradually add flour while stirring. Chill. 3. Roll out dough to 1/4-inch thickness, and cut into desired shapes. 4. Beat remaining egg, and brush each cookie with the beaten egg.
