1. Remove the zest of 1 orange and the lemon. 2. Juice the oranges, lemon and limes. 3. Combine the juice and zest in bowl. 4. Peel and mince the ginger root. 5. Finely chop the onion. 6. Add the garlic, ginger and onion to the citrus juices along with the cinnamon, paprika, sugar, salt, black pepper, nutmeg, wine and oil. 7. Whisk to mix. 8.
