Mango Chutney Salmon


1. Combine all ingredients for marinade. Rub onto all sides of salmon at least 15 minutes prior to cooking.

2. Spray medium skillet with cooking spray. Heat over medium heat until warm enough to create immediate sizzle when salmon is added skin down.

3. Cook salmon for 4 minutes. Turn over and continue to cook another 4 minutes. Return to skin side down and add chutney, sherry and cherry tomatoes. Cook until salmon is opaque when sliced.

4. Remove salmon. Stir drippings and tomatoes together and pour over salmon before serving.
