Mango Mousse

Mango Mousse


1. Purée the mangoes, better done in a food mill. Stir in the lemon juice.

2. Whip the whites with salt in a clean bowl. Add sugar, a little at the time, until stiff, but not dry. Fold into mangoes.

3. Whip cream stiff, fold into mangoes. Chill 4 hours before serving.
