Manhattan Seafood Chowder


1. Cut bacon into small pieces and fry in pan.

2. Remove from heat, drain and set aside.

3. Saute celery, red bell pepper, onions and garlic in small amount of bacon grease for several minutes to sweat.

4. Add fish and lightly sear.

5. Add water or chicken broth and simmer for 15 minutes.

6. Add tomatoes, clam juice, clams and simmer for 1 hour.

7. Add potatoes and carrots.

8. Season with paprika, red pepper flakes, Old Bay, oregano and hot sauce.

9. Simmer until potatoes and carrots are almost tender.

10. Season with salt and pepper to taste.

11. Add shrimp 15 minutes before serving.
