1. Mix the corn and the tomatoes. 2. In a separate bowl, mix the eggs, vanilla, sugar and milk. Add corn tomato mixture, the dry ingredients & the cheese, reserving some cheese for the top. 3. Pour into a buttered 2 quart dish & bake in a preheated 350ºF oven for 75 minutes or until set. 4. Serve warm or cold. ---------------------------------------------------------------------------
