1. Preheat broiler. In a small bowl, combine oil, lemon juice, paprika, salt & pepper; set aside. 2. Place chicken on the unheated rack of a broiler pan. Brush both sides of chicken with oil mixture. Broil 4-5 inches from heat for 10-12 minutes or until chicken is tender and no longer pink (170 degrees F), turning once. Cool chicken slightly; coarsely chop chicken. 3. To serve, spread hummus over the toasted pita halves. Top with the chicken, tomato and cucumber.
