1. Put lentils in a pot with enough water to cover them by 2 inches. 2. Bring to a boil, then simmer partially covered until tender (20-30 min). 3. Drain and rinse gently in cold water. 4. Place in medium sized bowl and add all ingredients except herbs and bell peppers. 5. Cover tightly and chill at least 4 hours. 6. Add the peppers and herbs an hour before serving. 7.
